Citronkage med citronglasur

Lækker citronkage med citronglasur.

En god og nem kage med en frisk smag af citron – god til eftermiddagste eller kaffe.

Ingredienser
Dej:
125 g blødt smør
225 g sukker
3 æg
200 g hvedemel
1 tsk. bagepulver
skal fra 1 økologisk citron*
1 1⁄4 dl mælk

Glasur:
1 økologisk citron
300 g flormelis

Fremgangsmåde

Tænd ovnen på 150 grader.

Pisk smør, sukker og æg sammen til en lys luftig masse. Sigt mel og bagepulver i dejen. Pisk fintrevet citronskal og mælk i dejen, til den har en ensartet og cremet konsistens.

Hæld dejen i en smurt springform ca. 20 cm, og bag kagen i ca. 60 minutter. Lad kagen køle helt af, før du tager den ud af springformen og pynter den med glasur.

Til glasuren røres flormelis sammen med fintrevet citronskal og saften fra citronen. Tilsæt evt. lidt kogende vand.

Pynt kagen med et tykt lag citronglasur.

*Det er vigtigt at bruge økologiske citroner i denne kage, da skallen indgår i opskriften. Ikke økologiske citroner er sprøjtet med diverse ubehagelig ting, der gør den kan holde sig frisk og voksne sig stor. Men det betyder også at skallen har voksagtig overflade og ikke smager godt i kagen. Desuden smager de økologiske citroner af mere og det giver mere smag til kagen.
